Blueberry Bran Muffins

Ingredients
  • 1½ cup wheat bran
  • 1 cup low fat buttermilk
  • ⅓ cup vegetable oil
  • ¼ cup egg substitute (or 1 egg)
  • ⅔ cup brown sugar
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup blueberries
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease muffin pan or use paper liners (I’d spray those too)
  3. Combine buttermilk and wheat bran. Let sit while assembling other ingredients.
  4. Mix oil, sugar, egg, and vanilla.
  5. Add to bran/buttermilk mixture.
  6. Add dry ingredients, mixing until blended.
  7. Gently stir in blueberries.
  8. Bake 15 to 20 minutes, until a toothpick comes out clean.

 

What I used to prepare these muffins: A super convenient hand mixer and a silicone muffin pan. Both are so useful in the kitchen! Once you have a silicone cooking pan, I bet you will be anxious to replace them all!
