The Adaptable Cauliflower

This vegetable is continually surprising me. From the first time I tried using it in fried rice, added it to burritos, meatballs, even chicken salad, I have been so pleased with the resulting good taste. The added nutrition and lower calorie count were bonuses.   After using it in so many cooked meals I wanted to try some using it raw.

This particular one is unique. I first tasted one similar at the assisted living home where mom lives.  It’s so delicious, yet takes only minutes to assemble.  Another plus, you can make it ahead of time.  Marinating increases the flavor.

It tastes crisp and light, the onion and the mandarin orange adding delightful flavor.

To save even more time, I used the Ninja Master Prep Pro for the onion and the cauliflower.  It only takes seconds though, or you will end up with small bites.  Still delicious, whatever size you like.

Give it a try.  The variations can be unending. Try your own favorite dressing. Use an orange or another fruit, toss in some raw broccoli  for color. Those are just a few ideas.  I hope you will share what you add too.

Mandarin Cauliflower Salad

Serves: 4 to 6

Ingredients
  • ½ cauliflower
  • 1 cup mandarin oranges, drained
  • ¼ cup chopped red onion
  • ⅓ to ½ cup Ranch dressing
  • Cilantro or Parsley
Instructions
  1. Clean and chop cauliflower into bite sized pieces.
  2. Combine in medium bowl with chopped onion, cilantro, and Ranch dressing.
  3. Gently toss in mandarin oranges.
  4. Serve right away or marinate, covered, in the fridge.
