SPINACH plus PITA for a gourmet PIZZA
Quick and easy have become the two key words I use when making dinner lately. With so many things on the to do lists, cooking has become a lower priority. Still, the goal is to eat healthier. That’s how this recipe came about.
Spinach is considered on of the top foods to eat for a healthy brain. It’s packed with vitamins and nutrients that are good for the entire body. This leafy green vegetable is also my favorite to add to nearly everything I fix, from eggs to burritos. So including it on these individual pita pizzas makes perfect sense.
Grab a pita pocket, your favorite vegetables, some sliced or grated cheese, the spinach of course, and you can have a delightful meal in the oven in minutes. Top with sliced kalamata olives or capers, bake for 25 minutes and you have a gourmet pita with a crunchy crust. Heavenly yet healthier.
Use your imagination for your favorite toppings. On each pita, layer cheese below a nice helping of spinach, then add your favorites. Top with cheese and olives, and bake.
