Taco Hot Dish.

Turn a regular Taco Hot Dish recipe into a vegetarian one instead. Swap out one ingredient for a different one. It’s nice when you can adapt a recipe that you really like a lot to fit the health needs of yourself or when cooking for others. Its fun to experiment with these types of recipes in switching out ingredients to see what works or doesn’t work. So find a recipe of yours to see what alterations you can make to it. Eating better is always a great idea.

I found this recipe in a cookbook that I bought at a local middle school quite a few years back. This cookbook has been a favorite of mine since. I use to make this Taco Hot Dish with real hamburger. Then one day I decided to try veggie burger in it. I now have it converted over to a vegetarian recipe instead. The burger that I use is a Worthington brand. It comes in a can and is soy based. It goes over well with my family whether they are vegetarian or not since we all grew up with no meat in our diet. I actually prefer the veggie meat in this recipe now ever since I tried it. It makes for a great hot dish.

Putting this hot dish together is very simple. It is layered once you get the meat mixture and the cottage cheese and cream cheese filling made. Then you top it with cheese and black olives. Then just pop it into the oven to bake. That’s it, easy peasy.

This can be served for family dinner or at a church potluck. Everyone will love it!

Vegetarian Taco Hot Dish

Ingredients
  • 1½ lbs veggie meat
  • 1 small onion
  • 8 oz shredded mozzarella cheese
  • 8 oz shredded cheddar cheese
  • 1 -15 oz can tomato sauce
  • ½ cup chopped black olives
  • 1 pkg taco seasoning
  • 24 oz cottage cheese
  • 1 - 8 oz bag Doritos crushed
  • 8 oz cream cheese
Instructions
  1. Put crushed Doritos on bottom of 9 x 13 pan.
  2. Brown veggie burger and onion. Add tomato sauce and taco seasoning to veggie meat.
  3. Layer veggie meat mixture on chips.
  4. Mix cottage cheese and sour cream then layer over veggie meat mixture.
  5. Top with mozzarella and cheddar cheese.
  6. Sprinkle chopped black olives on top of cheese. Cover with tin foil.
  7. Bake for 45 minutes at 350 degrees.

The first thing you’re going to do is brown the veggie meat and saute the onions.

Add the tomato sauce and taco seasoning. Now it’s all cooking up and ready.

Layer The Hot Dish

Crushed Doritos – First Layer

Now it’s time to layer the hot dish. First you start with crushed Doritos.

2nd Layer – Meat Mixture

Bake 45 minutes at 350. When done take out of the oven to cool; then serve. The photo below is what it will look like when done. Now sit down and enjoy your meal!
